What’s the difference between fresh and dried pasta?
Fresh pasta is often made with flour and eggs, although recipes vary by region and shape. Because it hasn’t been dried, it usually cooks more quickly than dried pasta and has a softer, more delicate texture. Dried pasta, made from durum wheat, is particularly well suited to shapes and sauces that need more structure. Both, and it’s a distinction we’re proud of. “Fresh” simply means the pasta hasn’t been dried – it can still be made by machine. “Handmade” means a person has actually rolled, cut and shaped it, the traditional way. At Casa Tua, every batch is handmade in-house, not bought in or machine-produced, using semola flour from Altamura in Puglia and British free-range eggs. It’s the same handmade approach behind our title as winner of England’s Best Pasta in 2018, and it’s still exactly how we do it today. Does pasta shape matter?
Pasta shape isn’t just about appearance. Our Red Wine Tagliatelle alla Bolognese shows how a long ribbon carries a rich beef ragù, while a tubular shape like our Paccheri al Ragù Siciliano – made with beef and fennel sausage ragù – holds a thicker sauce inside and around the pasta. Our Pear and Gorgonzola Tortelloni, on the other hand, comes with a lighter Parmigiano Reggiano sauce, letting the filling stay the main flavour rather than competing with something heavier.
What’s on the pasta menu right now?
If you can’t decide between dishes, our Pasta Experience is designed exactly for that. For £35.00 per person (minimum 2 people), you choose any three homemade pasta dishes from the menu to share at the table, tasting-menu style, served with warm scarpetta bread to mop up every last drop of sauce. It’s a chance to try more of the menu in one sitting than you’d typically order à la carte, at a set price rather than paying for each dish individually.
